Aichi Prefecture

Since 1978, the Ishikawa family has been cultivating tea high in the mountains of Aichi Prefecture, near Toyota. Now in its third generation under the care of Tatsuki Ishikawa, the farm sits at 650 meters, where cold winters drop below –15 °C and dramatic temperature swings create leaves with remarkable depth and aroma. The clear mountain air and organically nourished soil give each harvest a distinct richness.

From the beginning, the family has been committed to purity. Ishikawa Seicha became the first farm in Japan to receive organic certification, achieving JAS recognition in 1995 and later earning both EU and USDA certification. Long before “organic” was a standard, it was simply their way of farming.

The farm’s founder, Tetsuo Ishikawa, began by hand-clearing land in Shimoyama and nurturing the soil with natural fertilizers like wood chips and peanut bran. His vision was patient: more than a decade of tending the earth before the first harvest. That legacy of care is still alive in every tin of matcha today.

Now run by Tatsuki Ishikawa, the farm balances heritage and forward thinking. A skilled Nihoncha Instructor, he honors his father’s vision while teaching the next generation and opening the taste of this rare mountain matcha to the wider world.

"In the 1970s, there was no data on tea cultivation in high-altitude, cold regions, so my father tried planting more than 10 varieties to find one that suited this land. He discovered that Komakage could withstand the harsh natural conditions and produce excellent matcha. Although it's a minor variety in Japan, Komakage became our main variety.

Matcha is covered before harvest, but since tea trees are plants, covering them too much weakens them. Komakage, however, is very resilient, and the strong cover results in a mellow and refreshing flavor. The temperature difference in mountainous areas also contributes to its wonderful aroma.

Most matcha produced in Japan is a blend, but my Komakage is a single-origin tea grown in a single field."
